Cooking Wish List 2.0

As has been mentioned several times on this blog, I'm a big fan of Gjelina, GTA, and Gjusta (posts here, here, and here). Cooking Wish List 2.0 is inspired by one of my favorite lunch items at GTA - the pork meatball sandwich. The impossibly tender meatballs are coated in a perfectly sweet/savory tomato sauce and then topped with a vibrant pesto. All of that gloriousness is served on a brioche bun with fontina. It's as fantastic as it looks. You want to eat the screen, right?

Next door to GTA, Gjelina serves the meatballs naked with some crusty bread. That dish alone is a worthwhile endeavor.

Recipe Breakdown

Here's how things shake out for the sandwich:

  • Basil Pesto
  • Braised Pork Meatballs
  • Pomodoro Sauce
  • Brioche Bun
  • Fontina

The pomodoro sauce and pork meatballs are in the Gjelina cookbook which is helpful. In terms of the pesto, I've made it in the past with a food processor and was happy with the results. That being said, I'm stepping up my game and opting for a mortar and pestle this time around. The tools used at the Pesto World Championship in Genoa have me convinced that fatto a mano will create a truly excellent sauce. Fontina will come from a local cheese shop and I may cheat on the buns and buy those as well.

There is still an abundance of delicious tomatoes available at the Santa Monica Farmers Market so I plan to get going on these recipes stat. Posts to come. Cooking Wish List 1.0 can be found here.
